Chocolate Kiss Biscuit Recipe

Today I'm sharing a recipe for one of my favourite biscuits ever - chocolate kiss biscuits! There is something so nostalgic about this recipe for me, and I'm sure you're going to love it too. Here's how to make them:

What you'll need:
- 1 cup butter
- 1 1/2 cups sugar
- 3 cups plain flour
- 1/2 teaspoon bi-carb soda
- 1 teaspoon cream tartar
- 2 tablespoons cocoa
- 2 eggs
- 1/2 teaspoon vanilla extract

Step 1: Cream butter and sugar together well. Add eggs and mix well.
Step 2: Sift flour, bi-carb soda, cream of tartar and cocoa into egg mixture. Add extract and mix well.
Step 3: Line a baking tray with greaseproof paper and roll mixture into small balls. Press lightly with a fork into a round shape.

Step 4: Bake in a moderate oven for 10 minutes, or until cooked. When cold join two together with vanilla filling.
Step 5: For filling, cream 1/2 a cup of butter with 2 tablespoons of boiling water, add 1 teaspoon of vanilla extract and 4 level tablespoons of cornflour and enough icing sugar to make it the right consistency for spreading.

Keep in an airtight container, and try not to eat them all at once! Bonus tip: they are especially delicious with a nice cup of tea!
